"Keep in mind that the point of decanting a wine like this is to expose it to air, so don't be excessively delicate, or fussy; let it splash down inside the bottle."

Talking with Forgeron winemaker Marie-Eve Gilla over Spring Release weekend, she stated that it was "MURDER!" (emphasis not my own) to splash the wine into a decanter. She had a great analogy that I can't bring to mind at the moment. She said this with the passion of a person who was expressing horror at struggling over her creation and then seeing it so wantonly tossed into a different vessel. Since this conversation, I have been feeling a great deal of guilt over my many wine crimes and trying to keep a low profile. I could try to claim ignorance but...

I can't speak to the actual scientific differences that splashing or not splashing may impart to the wine. However, if you are decanting with the winemaker nearby, you might want to gently pour the wine down the side of the decanter lest someone scream "MURDERER!"

Yes, the subject of decanting is a bit of a religious issue. I am tempted to go look for, and translate, the bit from a Latin cookbook that talks about the proper method of decanting, and then covers when and how to add lime to the red wine . . . I suspect the trauma might be too much for my readers.
